Avocado and Walnut Salad with Peanut Kefir Dressing
Avocado and walnuts both provide essential fats, important for brain and skin health.
Using kefir in the dressing may also help to boost your good gut bacteria.
2 tsp smooth peanut butter
1 tsp sesame oil
½ tsp honey
3-4 tsp kefir
1 tsp balsamic vinegar
1 large avocado, peeled, stoned and thinly sliced
40g cucumber, sliced
40g feta cheese
50g walnuts, toasted
1 tbsp pomegranate seeds
To make the dressing, whisk together the peanut butter, sesame oil, honey
kefir and balsamic – if you want to loosen it a bit more just add more kefir or
a little water.
Using a vegetable peeler, slice the courgette into ribbons. Divide the
courgette between two plates and top with the remaining ingredients.
Spoon over the dressing to serve.
